Candies made from pecans
Original Pecan Pralines
2 cups firmly packed brown sugar
1/4 cup water
2 1/2 cups mixed pecan halves and pieces
1 tbsp. butter
Combine sugar and water in saucepan. Heat to boiling, stirring constantly. Stir in pecans; cook until mixture reaches the soft ball stage. Remove from heat and stir in butter. Immediately drop by tablespoonfuls onto waxed paper; let stand until firm.
Orange Balls
1 12-oz. pkg. vanilla wafer, crushed
1 c. confectioners’ sugar
1/4 cup soft butter, softened to room temperature
1/2 c. frozen orange juice concentrate, thawed
1/2 tsp. vanilla
1 c. chopped pecans
Combine crumbs and sugar; blend in butter. Stir in orange concentrate; add vanilla and nuts. Shape mixture into bite-sized balls; shake in plastic bag with additional confectioners’ sugar. Arrange orange balls in single layer on tray; store, uncovered overnight in refrigerator. Store in tightly covered container. Yields 36-40 balls.
Pecan kisses
1 egg white
3/4 c. brown sugar
1/2 tsp. vanilla
2 c. pecan halves
Beat egg whites to soft peaks stage; mix in brown sugar and vanilla gradually. Fold in pecan halves. Place coated pecan halves on greased cookie sheet about 1 inch apart. Bake in 250-degree oven for 30 minutes. Turn off oven; let set for 30 minutes. Store in airtight container. Will freeze well. Yields five to six dozen kisses.
Pecan Delights
(This one is easy to make with the kids.)
Cream one cup of brown sugar with one-half stick of butter. spread this over 15 graham crackers; sprinkle on this one cup of chopped pecans. Put in a moderate oven for about 10 minutes.
Peanut Crunchies
1 6 oz. pkg. chocolate chips
1 6 oz. pkg. butterscotch chips
1 cup chow mein noodles
1 cup peanuts
Melt chocolate and butterscotch chips in top of double boiler. Stir in noodles and peanuts. Drop from spoon onto cookie sheet and chill until firm.
Peanut Clusters
2 c. sugar
1 heaping tbsp. cocoa
1/2 cup top milk, or half and half
1 tsp. vanilla
1 c. peanuts, chopped
Measure sugar, cocoa and milk into pan and bring to a boil. Boil exactly six minutes. Remove from stove and stir in vanilla and peanuts. When nearly cold drop by spoonfuls on waxed paper.
